Dave MacLean is back on Brew Ha Ha with Steve Jaxon and Herlinda Heras, to talk about Hidden Splendor Beer and Outside Lands 2025. He has been on the show before, the last time was this episode a couple of years ago.
Hidden Splendor Beer is Dave’s new brewery that will be opening soon. Dave likes to create good beer and then places to enjoy it in. That is what he did in his previous endeavor, Magnolia Brewing. He will be brewing a lot of traditional beers, bitter, mild, light mild, porter, stout, pilsners and lagers.
He is also curating beer for Outside Lands on Aug. 8, 9 & 10 in San Francisco. This year it will have a new look and feel. There are 22 breweries enrolled. Each brewery will have two beers. His job is to curate a well-rounded menu that shows the gamut of beer styles. It’s not just an IPA fest or a beer fest.

Hidden Splendor will have a location in San Rafael that will open in the Fall. Dave wants it to be a ‘brewer’s brewery’ including using some rare brewing techniques like cask beer. In the meantime they will be delivering beer to the festivals like Beer Lands.
Cask ale and Czech side pour
The side pull is a kind of valve that opens and closes in a different way in order to regulate the foam. The operator also has to have the right technique. The Czech beer style pays a lot of attention to getting the foam just perfect. It is a way to have a fine-tuned, precise way of pouring that kind of beer.

There are two parts to Cask Ale. Mostly the casks are stainless steel now. You put the beer in the cask, add some yeast and extra hops, and it naturally carbonates. It’s like bottle conditioning for champagne. It is a more dynamic product, “some people say it has a finer quality of bubble to it.” There is a pump that draws beer out of the cask, to serve it. It is a less invasive way to use suction to pour the beer. Herlinda says they come out really smooth.
